Maksim Semena, a 3rd year student of the Higher School of Gastronomy has won All-Russian Olympiad in Culinary Arts and Service for HoReCa professionals.
The event took place on September 10–12, 2021 in Perm.
The All-Russian Olympiad LEGEND is a prestigious contest for professionals in the field of HoReCa. It sets the trends of the industry in Russia. The competition allows to identify professionals in following specialties: chef, cavist, wine blogger, confectioner, caterer, pizzaiola, junior and art classes, national Perm cuisine, cezve, and ibrik.
Maxim Semena participated in Junior Chef category. He had to prepare a dish from scratch in 2.5 hours and then present it to the jury. Among his dishes were chicken pate with porcini mushrooms, fillet mignon sous vide, potato croquettes with black truffle and quail eggs and other.
By the way, this summer Maxim had an apprenticeship in Disfrutar restaurant located in Barcelona, Spain.
